Mediterranean Chickpea Salad is a colourful, refreshing, and protein-rich salad made with chickpeas, cucumber, tomato, onion, herbs, lemon juice, and olive oil. It is filling, easy to prepare, and works well as a light lunch, evening snack, or side dish with grilled fish, chicken, paneer, or roti.
Ingredients
- Boiled chickpeas: 1 cup
- Cucumber: ½ cup, chopped
- Tomato: ½ cup, chopped
- Onion: ¼ cup, finely chopped
- Capsicum: ¼ cup, chopped
- Fresh coriander or parsley: 2 tbsp, chopped
- Lemon juice: 1 to 2 tbsp
- Olive oil: 1 tsp
- Black pepper: ¼ tsp
- Roasted cumin powder: ¼ tsp
- Salt: as required
- Optional: feta cheese or paneer cubes, 2 tbsp
Instructions
- Take boiled chickpeas in a mixing bowl.
- Add cucumber, tomato, onion, capsicum, and fresh coriander or parsley.
- Add lemon juice, olive oil, black pepper, roasted cumin powder, and salt.
- Mix everything gently.
- Keep it in the fridge for 10 minutes before serving for better taste.
- Add feta cheese or paneer cubes if you want extra protein and flavour.
